Buffalo/Bison??

I was talked into trying buffalo (yea, I know the correct term is bison, but I still think buffalo) while in B'ham last week at Ted Turner's Montana grill and I can truly say it was great!! I was so hesitant to try it cause I hate deer meat and have had so many people tell me that they can cook it so that I won't know the difference between it and beef--which turned out to be a big lie. One bite into deer meat and you know it is deer meat and believe me, I've had it cooked every way possible. But, the buffalo did taste good and maybe even better than beef. It was so tender and juicy. Much more so than beef. A little more expensive, but, hey, they prepare only fresh meat. The restaurant doesn't have freezers (except a small one for ice cream), no microwaves, and cut and peel their own potatoes and veggies every day. I was really impressed with the classy restaurant.

I have had Bison a few times and loved it each time. Bison Burgers are good also. But the best Bison dinner I ever had was last year in Toronto at Tundra Restaurant. Tundra serves up several game dishes on the menu and everything is fresh daily.
 
I've been a deer hunter my entire life and i've never had any venison that tasted like beef either. But...I have enjoyed venison's unique flavor.

Some things that can ruin venison before it gets to the table:
1. Improper field dressing.
2. Allowing hair to taint the meat.
3. Improper aging, or not aging at all.
4. Not adding some sort of fat to any venison recipie (venison is very lean and all venison fat should be trimmed and substituted for).
5. Overcooking. Well done is a no-no.

One of my favorite venison recipes:

1 quart water
2 pounds peeled red potatoes
1 pound venison
1 pound pork shoulder or pork butt (for the fat)
1 onion chopped
1 egg beaten
1 tablespoon salt
1/2 teaspoon ground allspice
1/4 teaspoon dried ground sage leaves
1/4 teaspoon dried basil leaves
1/4 teaspoon sugar

In a 2 quart pan, heat water to boiling...then add potatoes.
Return to boiling, reduce heat, cover and simmer 30-35 minutes.
Drain, cool potatoes and cut into 3/4 inch cubes.
Cut venison and pork into 3/4 inch cubes.
In a large bowl, combine venison, pork, potatoes, onion and egg.
In a small bowl, combine remaining ingredients, then sprinkle over meat and potato mixture; mix well.
Cover bowl with plastic wrap and refrigerate at least 1 hour to blend flavors.
Chop or grind meat and potato mixture to a medium consistency.
Shape into thin patties.
Fry in a non-stick skillet in a small amount of oil until browned, turning once.
 
I have eaten a lot of different game but there is one I don't think I will ever be able to eat and that is Moose. There is a story behind it though. We visited some friends a while back that live in Canada and they served a Moose Roast. The guy would kill 2 Moose each year to stock the freezer. When we got there the smell would almost knock you down. It was so strong and pungent it was making us sick. Had to make the old we aren't used to eating game excuse as we picked at our food. You would think someone who ate that much Moose would find a way to mask that smell. Maybe they were just used to it but anyway, that ruined my taste for Moose. :D
 
bison meat

Bison meat is very good. I would replace beef for this if it was not so darn expensive. Bison has 95% less fat than beef as well. Eat up and enjoy. :biggrin:

p.s. would any one happen to know where I could get the fight song and all the chants downloaded?

I've recently been getting buffalo meat at Publix. I love it, makes great burgers and chili. Haven't tried in in a meat loaf or in spaghetti sauce yet. Might do that tomorrow.

Bison tastes more like hamburger than hamburger.

TMac, let me know how the meatloaf turns out if that's what you make. I don't have a lot of experience with bison. I have grilled a few steaks and we get bison burgers every once in a while. The meat is so lean we cook ours pretty rare. If you don't they are pretty dry as there is no fat to keep them moist. If I were to try a meatloaf I think I might add some bacon strips or even grind the bacon and mix it in with the meat. Kind of like making deer sausage ;). It should be delicious and it's way better than Moose. :D

I took my hubby there Saturday night for Father's Day and he got the bison. He must have had a bad cut b/c his was a little tough, good but tough. I agree Ted's was really good. My 2 year old son ate the stew - it was very tender and good.
