Chicken Wing Sauces

Here's a few that have been posted on the board from time to time.

This is one of Bayou's -- an asian type of sweet & hot sauce I think.

Ingredients:

1 cup Rice Wine Vinegar or Apple Cider Vinegar
1 cup sugar
1 tsp lemon zest or couple tablespoons lemon juice
1 or 2 cloves garlic finely minced
1 1/2 tsp crushed red pepper flakes (adjust to your taste)
1 pinch salt

In a non reactive pan bring vinegar to a boil. Add sugar and turn heat down to low. Stir to dissolve sugar and let simmer 5 minutes. Remove from heat and add the rest of the ingredients and let sit for 20 minutes. pour through a strainer into bowl. Serve hot or cold.

Texas Pete Hot Wings

Clean chicken wings. Place on a wire rack in a bread pan; salt and pepper to taste on both sides. Bake at 375 degrees F for 1 hour, 30 minutes on each side.

Melt butter or margarine. Add Texas Pete hot sauce to butter, mixing well. With a pastry brush, brush hot sauce mixture on both sides of chicken. Enjoy!

I made a small batch of the Asian Sweet & Hot sauce tonight for some boiled shrimp and eggrolls. also made my plain old red cocktail dipping sauce. It was all good. The Asian sauce is very versitile and you can make it as hot or sweet as you like.
