Chicken Wing Sauces
Here's a few that have been posted on the board from time to time.
This is one of Bayou's -- an asian type of sweet & hot sauce I think.
Ingredients:
1 cup Rice Wine Vinegar or Apple Cider Vinegar
1 cup sugar
1 tsp lemon zest or couple tablespoons lemon juice
1 or 2 cloves garlic finely minced
1 1/2 tsp crushed red pepper flakes (adjust to your taste)
1 pinch salt
In a non reactive pan bring vinegar to a boil. Add sugar and turn heat down to low. Stir to dissolve sugar and let simmer 5 minutes. Remove from heat and add the rest of the ingredients and let sit for 20 minutes. pour through a strainer into bowl. Serve hot or cold.

Ingredients:
10 whole Habanero chile pepper stemed & not seeded
10 whole serrano chile pepper stemed & not seeded
1/2 cup honey
1 cup cider vinegar
6 cloves garlic
juice and zest of one large lemon
1 tablespoon salt
6 drops of Pyro Diablo
Put in blender or food processor and blend till everything is turned to a liquid.
Red Dog Tavern Armageddon Sauce
15 whole Habanero chile pepper stemed & not seeded
1/4 cup honey
4 cloves garlic
7 ounces bottle "Taste of Thai Chile Garlic Sauce"
Blend and eat. Be careful cleaning the blender.
Hooters Chicken Wing Hot Sauce
Ingredients:
3 Sticks Butter (softened)
1/2 C. + 2 Tbs. Tobasco Sauce
3 Tbs. Brown Sugar
3/4 tsp. Paprika
3/4 tsp. Salt
1 Tbs. Balsamic Vinegar
3/8 tsp. Cayenne Pepper
2 Tbs. Chili Sauce
Preparation:
Mix all ingredients together. This will store well in the refrigerator for up to 2 weeks. Serve this with the Hooter's Hot Wings. I think their bottled version is now sold in stores.
Texas Pete Hot Wings
1 dozen chicken wings
1/2 cup (1 stick) butter or margarine
1/3 cup Texas Pete hot sauce
Salt
Pepper
Clean chicken wings. Place on a wire rack in a bread pan; salt and pepper to taste on both sides. Bake at 375 degrees F for 1 hour, 30 minutes on each side.
Melt butter or margarine. Add Texas Pete hot sauce to butter, mixing well. With a pastry brush, brush hot sauce mixture on both sides of chicken. Enjoy!
