RECIPE: Stuffed Chicken Breast Ritz

INGREDIENTS:

4-6 boneless, skinless chicken breasts
1 roll of Ritz crackers
½ cup chopped fresh parsley
½ pound cooked bacon or cooked breakfast sausage
cheese – you can use cheddar, jack, mozzarella, blue, goat whatever you like (BL, you can even leave the cheese out and substitute chopped mushrooms or spinach)
1 cup mixed onion, celery and hot pepper
olive oil
brown sugar
salt
egg wash made from egg and milk (That’s 2 eggs and a little bit of milk)

COOKING:

Wash and pound out flat the chicken breasts. Crush Ritz crackers or run them through the blender or food processor to make a cracker meal. Mix the cracker meal and parsley together in a pan and set aside. Make the egg wash. Fry the bacon or sausage, remove from pan and sauté the onion, celery and peppers in the drippings. Remove and set aside. Preheat oven to 375 F.

Coat inside of each breast (chicken) with olive oil then the brown sugar.. Next divide the meat, cheese and sauté veggies between the breasts. Roll up the breast and pin with tooth picks. Salt the outside and dip in egg wash then roll in Ritz cracker meal. Place in large pan and bake for about 40 minutes.

That sounds good Bayou. I've seen one similar, but not sure that it had the option for bacon or sausage in it!

Well, you know me, I like to give out options. There is more than one way to skin a cat............ errrrrrr make a sandwich. ;)
