Pressure Canned 12 quarts of homemade chili (Pics)

I figured I'd take some pics to share.

I recently bought a 23 quart Presto pressure canner and I did my first pressure canning. I whipped up a giant batch of my chili and ended up canning 12 quarts....worked out pretty well.

This is just a portion of the almost 4 gallons of chili I made.

First 7 quarts done


All 12 quarts done....ran out of jars so we're eating the rest of the chili this weekend!

The sound of the pressure cooker scares the hades out of me. My grandma used to can a lot of green tomatoes, peppers and chow chow. I wish I could do that but it is scary and time consuming.

This canner I have is built like a tank, seems very secure when locked down. The noise isn't too bad, just the constant rattling of the weight when it reaches pressure.

It is time consuming, took about 4 hours or so to do all 12 quarts.....most of that cooking time.

chili recipe??
Pretty simple. For this huge batch I made, I used about 2 gallons of tomatoes, 5 lbs of ground beef, 3 lbs of ground breakfast sausage, 6 cans of chili beans, 4 large green pepper and 4 yellow onions. I went the easy route and used 4 packets of premade chilio seasoning mix.
