Coconut Chess Pie

It is almost impossible to screw-up this recipe.

6 Eggs
11/2 Cups sugar
1/2 Stick butter, melted
1 tsp. Vanilla extract
3/4 Cup buttermilk
1 Cup Shredded, sweetened or unsweetened, coconut
1 Unbaked deep dish pie shell (in it's aluminum pan)

Preheat the oven to 350.
Place first six ingredients in a medium sized bowl.
Mix well on low mixer setting.
Place pie shell on cookie sheet and fill shell with mixture.
Place cookie sheet/pie shell in oven and bake for 45 minutes.
Cool before cutting.

I made this to take to work and everyone raved about it. One of the best pies I have ever had. I'm constantly asked to make it again and again.
