Need Everyone's Help - Throwing a Party

I am in charge of the food for a X-Mas party (around 200 to 250 people). We are going to buy some food - Chicken Fingers, Cheese Trays, etc. and I have someone making Chicken Salad Sandwhiches.

Does anyone have any great recipes for feeding a large group of people (or that they like to serve up at parties/games, that would double/triple easily)?

Any suggestions would be greatly appreciated.

I would buy some big cans of mixed nuts like they sell at Sam's Club and put bowls full out to nibble on. Pretzels, cheese straws and chex mix are good nibble food that you just dump in bowls. Chips and dips or cheese balls are easy to make or inexpensive to buy. Perhaps some tea sandwiches made with cream cheese & pineapple or quisidillas.
 
Do you have Costco? There are wonderful appetizers there: pigs in blankets, scallops wrapped in bacon, little quiches, premade swirl sandwiches, veggie trays with dip, fruit with cream cheese dip, etc.
 
The roll up sandwiches are super easy to make. I have seen really large flour tortillas made with sun-dried tomato, some green with spinach, some with jalapeno peppers. Just square the edges a little, add some deli meat, cheese, veggies or whatever.
 
Recipe: BBQ Party Meatballs

INGREDIENTS:

2lbs ground beef
1lb Ground pork sausage (I like using hot or spicy sausage)
Bottled BBQ sauce
Grape Jelly

DIRECTIONS:

Mix beef and pork together (season to your taste) and form into small meatballs no bigger than ping pong balls.

Brown the meatballs and cook till done. Place meatballs in large serving bowl or heated server.

Mix BBQ sauce and grape jelly together in sauce pan and let simmer for a few minutes. (the ratio of sauce to jelly should be about 2 to 1)

Pour sauce over meatballs, mix well and place a shotglass full of toothpicks next to the serving dish to spear the meatballs with.
