Broccoli and Cheese Casserole

2 packages frozen chopped broccoli, cooked and cut into small pieces
½ pound cubed Velveeta cheese
1 stick butter- cubed
40 Ritz crackers- crushed
¾ stick butter, melted

Cook broccoli and drain. Use a casserole dish to layer broccoli, cheese cubes and butter cubes; continue to layer, using all broccoli, cheese cubes and butter cubes.

Crush Ritz crackers and mix with melted butter until all crackers are coated. Pour cracker crumbs over broccoli mix in the casserole dish.

Bake at 350 degrees for 20-30 minutes, until mixture bubbles.

Recipe: Creamy Broccoli And Cheese Macaroni

CREAMY BROCCOLI AND CHEESE MACARONI

INGREDIENTS:
1/3 cup all-purpose flour
2 1/3 cups milk
1/2 cup shredded Gruyere
1/2 cup grated Parmesan
1/2 cup shredded Cheddar
3 ounces American cheese (recommended: Velveeta), shredded
3 cups cooked elbow macaroni
1 1/2 cups broccoli florets, steamed
1/4 teaspoon salt
nonstick cooking spray
1/2 cup seasoned bread crumbs

DIRECTIONS:
Pre-heat oven to 370 degrees F.

Combine flour and milk in a large saucepan over medium-high heat, whisking until blended. Reduce heat to medium and continue to cook over medium heat until thick, stirring constantly, about 10 minutes.

Whisk in all the cheeses and continue cooking until melted.

Remove cheese sauce from heat and stir in cooked macaroni and broccoli.

Season with salt, to taste.

Lightly spray a 2-quart casserole dish with cooking spray. Pour pasta and cheese sauce mixture into dish. Top with breadcrumbs and bake for 30 minutes or until bubbly. Let stand for 5 minutes before serving.

Could be garnished with sliced black olives, parsley, pimento or roasted red bell pepper strips.
