In view of these numbers, why has all the focus been on "Alabama's played no good defenses." Why is it not "LSU's played no good offenses?" Their DBs have looked really good against mediocre, at best, WRs, by and large...

LSU has faced two defenses with better passing efficiency rankings (Miami at #6 and Mississippi State at #7) with Georgia right behind Alabama at #14. Actually, Ole Miss at #103 and Southeastern Louisiana at #103 in FCS are the only teams outside the top 30.
Conversely, Louisville is the only offense with a worse passing efficiency rating than LSU on Alabama's schedule.
Alabama's offense hasn't faced a defense inside the top 90, though. Outside of Florida and Georgia, LSU's defense hasn't seen an offense inside the top 40.
Not really sure what to make of those numbers. Neither have played fabulous offenses or defenses thus far.
